{ Zucchini Bread Muffin Recipe }

I know I mentioned in my last post how I have dozens of monster zucchini growing in my garden, I figured what better to do with them then make tons of zucchini bread and muffins and freeze 'em! I realize that a lot of you probably have tons of zucchini ready to harvest as well so I thought I'd share my recipe. Now I have tried TONS of zucchini bread recipes but this one is hands down the very best!

Ingredients

3 eggs

1 cup vegetable oil

2 cups white sugar

2 cups grated zucchini

2 teaspoons vanilla extract

3 cups all-purpose flour

3 teaspoons ground cinnamon

2 teaspoons nutmeg

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon salt

1/2 cup chopped walnuts

Directions

{1}Preheat oven to 325 degrees F .Grease and flour two 8x4 inch loaf pans.

{2}In a large bowl, beat eggs until light and frothy. Mix in oil and sugar. Stir in zucchini and vanilla. Combine flour, cinnamon, soda, baking powder, salt and nuts; stir into the egg mixture.

Divide batter into prepared pans.

{3}Bake for 60 to 70 minutes, or until done.

* I never add the walnuts since I am not a fan of nuts in baked goods but I have added chocolate chips and it turned out great. I also do half oil and half apple sauce to try to make it a bit more healthy. Also watch your bread/muffins because mine NEVER takes as long as it states to bake.

So much stuff going on recently....

{1} We have had this rubbermaid 5 shelf thing in our garage since...well since we built our house! It used to hold all the extra pantry like food items that our small pantry could not hold. It was seriously weighed down! Over a year ago we got all these FREE shelfs from my old job and we intended all along to put them up in our garage so that we could actually have a decent area for food storage. Shoot forward to the present...we finally went and bought the brackets/hardware and hung them all up! We organized all our food storage out there and now it's SOOO nice! Kinda like my own little grocery store! ♥ it!

{2} I really want to re-paint my livingroom and add some board and batten to the walls..BUT..before I can go starting another massive project I have to finish up my scrapbook room. So I am proud to say that I have finished painting it all ( a really pretty grey color) and I have finished putting up the beadboard wallpaper (which rocks!) and now all I need to do is have Geoff help we install the chair rail around the room! I'll post pictures once everything is back in it's place!

{3} We are growing a garden again this year with cucumbers, yellow and green zucchini, onions, snow peas, watermelon, tomatos and strawberries. Well our zucchini plants were taking over! They were growing SO big so finally we decided to trim some of the leaves of just a bit. Tonight Geoff went out there to water and came in and told me that it might be time to pick a few of the zucchini. I followed him out and sure enough a half dozen of the zucchini were the size of my forearm! No joke! So I guess trimming the plant did it some good. Anyone have a any good recipes involving zucchini other than bread?

{4} A couple weeks back my sister and me went to Ross Water park in Pocatello with my friend Ashley and her daughter Addy. Us girls had so much fun just watching Addy run around in the zero depth pool that they have and floating the lazy river. At one point Addy found herself a little beau to boss around and we three adults found ourselves super entertained by the little "couple" It was SO cute, Addy simply just told him what to do and he jumped to it!

{6} Lately I have been obsessed in looking at home decor blogs and what not and I found THIS A*M*A*Z*I*N*G blog! I just love her style and her tutorials rock! Everyone needs to check out the

68 degrees...yes I realize that seems low but Geoff and I really like it cool.

Mocha colored walls, white furniture, chocolate and teal fleur-de-lis print bedding, lots of picture frames with photos of just Geoff and I ( we are SO vain).

C- The CAR in the driveway is:
A white Ford Explorer

D- My DESK looks:
Looks like a scrapbooking store vomited ALL over it! I am in the middle of serveral projects currently.

E- The EXACT time I wake up daily is:
I don't really have a SET time when I wake up. It varies day to day.

F- The FIRST thing I wash in the shower is:
My hair

G- My GARAGE is filled with:
Geoff's truck, Geoff's bullet bike, a punching bag, various totes with random crap, lots of lawn stuff, furniture that I bought on the cheap and need to refinish, etc

H- My HOUSE is:
A constant work in progress. As soon as I finish painting and decorating all the rooms I have to start all over with a new idea!

I- If you peeked INSIDE my bedroom you'd see:
A made up bed along with two dogs that seem to think it belongs to them!

J- My favorite JUICE is:
Pomagranate Apple

K- The best part of my KITCHEN is:
That it is huge, seriously it's like my kitchen ate two other kitchen. I love it!

L- The LAST person who visited my home was:
Some missionaries were here a few days ago.

M- The last piece of MAIL for me was:
I think it was either a insurance offer or a postcard from Tai Pan with coupons

N- My NEIGHBORS think I'm:
Uhh let's not even go there...lol

O- If you OPENED my fridge you'd see:
A whole lot of stuff- milk, sweet tea, strawberries, grapes, greek yogurt, leftovers, carrots, condiments, cream cheese, etc

P- My last house PARTY was:
A house party? Well the last party I had at my house was in May

Q- A QUICK meal I like to fix is:
Crock pot lasagna, super simply and yummy!

R- My favorite ROOM of the house is:
Probably my scrapbook room, even though it's not 100% the way I want it. My kitchen is a close second.

S- The SHAMPOO brand I use is:
Usually use Tresemme sometimes I change it up though

T- My largest TELEVISION is:
42 inches I think...

U- UNDER my bed you will find:
Nothing...well maybe a dog toy.

V- The last time I VACUUMED was:
Today. Seriously with two dogs AND two cats vacuuming is a daily thing around here.

W- Looking out my WINDOW I see:
The kids that live in the house behind mine jumping on their tramp...haha with a sprinkler under it! I remember doing that except we also put dish soap on the tramp to make it slippery!

X- I wish I had X-TRA:
Everything!

Y- My YARD is:
Needing to be mowed, and have some serious weed killer put down in a couple areas!

{ New Dinner Recipes }

I thought I would start posting the recipes that I find online and make and really enjoy so those of you out there can make them as well. So here is a few I have tested lately...

{1} Lemon Basil Pasta w/ Grilled Chicken- I found this recipe on The Pioneer Woman Cooks, if you have never visited this blog you need to. NOW. She always has the most amazing recipes w/ step by step photos that are so helpful. This recipe was SO good! Everyone was raving about it when I made it. Very simple as well whch is always a bonus.

{2} Thai Chili Peanut Meatballs- This recipe was great because not only was it so delicious but you make it in the crockpot! I serioulsy have a love affair going on w/ my crockpot since it's been so warm outdoors...This takes a few kinda random ingredients that I doubt you have in your pantry such as fish sauce and red chili paste but is still really worth making!

{3} Ice Cream Sundae Brownies- Now I know these are not a dinner but I just had to give a shout out. These brownies were AMAZING. I found the recipe on Picky Palate and seriously now just wanna add ice cream to EVERYTHING I bake. I made these and took them to Oregon for my family reunion and let's just say they were a BIG hit!

{ Recent Happenings }

Does anyone else have an extremely hard time blogging during the summer months? The weather is too nice and therefore provides far too many distractions. In an attempt to somewhat keep everyone up to speed here is the quick list of recent going on's in our house.

* Geoff and I made a trip to Sisters, Oregon last month for a family reunion on my dad's side. We rented these amazing cabins at Black Butte Ranch and had a great time hanging out with family!

* 4th of July was a blast. We did the usually, had a BBQ, watched the fireworks down by the river, set off our own fireworks, took in a baseball game and went tubing at Warm River.

* My friends Ashley and I have been taking the Wilton cake decorating class at Michael's. We completed the first series of classes in June and are now on to the second series. I think it's safe to say that I do not have a future at a professional, however I do have a lot of fun trying!

* I met Jill in said Wilton class and found that she hosts some great crops at her house every other weekend which is great since Roberts closed I haven't been able to find a crop I enjoy. Bonus: Jill is freaking funny! Check out her blog by clicking on her name above.

* The INL had the largest ever recorded wild land fire so Geoff was super excited to have some actual BIG flames to put out. He ended up spending 5 straight days on call as a result. Needless to say I think he was just as excited when he finally got to come home!

* I finally found a great armoire to house my TV in my living room. The best part? It was $50.00 on Craigslist. Which is an amazing deal considering it is a Broyhill. Stay tuned for the before and after pictures as I attempt to refinish in myself!

* The weather has finally heated up enough that we had to turn on the good old AC. Which now means that even our dogs are reluctant to want to leave the cool house and venture into the backyard!

{1} Dear Lizzy Enchanted Line from American Crafts. Now technically this line won't be released until Summer 2010 CHA but I still am drooling over it almost daily. Just love the colors and prints!

{2} M&M Pretzels....I am digging the sweet and salty combo of these newest little creations from M&M.

{3} Sure Cuts A Lot software for my cricut....this amazing software now allows me to cut any of my TrueType fonts. No more spending $50.00 on ONE cartridge for me!

{4} Whippy Cake Hair Accessories....now I can make these on my own but hers are just so lovely. Amazing color combos...

{5} TomKat Studios....you want to drool over some serious eye candy? Look no further. Gosh I could spend literally hours looking through this blog.

{6} My new Lime Ricki swimsuit.....I just love their swimwear! So cute!

Omigosh how I love these necklaces! I have been seeing them all over the blog world and these two have got to be my absolute favorites! Who is not loving the color combo with the yellow, teal and gray....♥♥♥. I have attempted this look with headbands and they came out pretty stinkin' cute so I am going to have to give these a try! 5} I am attempting to become more organized.
6} I spent 7+ years working in a hardware store.
7} I am a fantastic bread maker...surprisingly.
8} I use more hairspray then anyone I know.
9} I can't eat chicken in restaurants for fear it's undercooked.
10} I have only lived in 2 states my entire life...and I am okay with that.
11} I HAVE to purchase new earrings anytime I buy a new shirt/outfit. Therefore I have more earrings then I can count.
12} I believe I will be an excellent mother...when the day comes.
13} I have no understanding of the inner workings of a vacuum cleaner. I never have been able to change a bag or a belt. Ever. People have made fun of me for it. I don't care.
14} I could spend hours searching through the Target clearance sections. And many times I have!
15} I hate cars that are any color EXCEPT white, black, red and yellow. Although the champagne color is growing on me.
16} I ♥ animals. I stop along the side of the road weekly to pick up lost/stray dogs and find their owners. Seriously weekly.
17} I despise roller coaster rides.

Recently a friend of mine told me about this food co-op called Bountiful Basket. Basically you get on their website (http://www.bountifulbaskets.org/) and sign up and every Monday you place your order for your "basket". Baskets cost only $15.00 or $25.00 for a 100% organic basket. You then go to your chosen pick-up location on Saturday and retrieve your "basket". Let me tell you, it is SO worth every penny! You get so much fresh food for the money...easily over $50 worth had you gone to a typical market/store. Last weekend Geoff and I picked up out basket and it had....

8 Apples
8 Oranges
2 Giant bags of Red Grapes
1 Large carton of Strawberries
4 Grapefruit
1 Pineapple
1 Cantalope
6 Large Carrots
1 Head of Romaine Lettuce
1 Package of Cherry Tomatos
1 Package of Mushrooms
2 Crowns of Broccoli
4 Sweet Potatoes

Plus we paid an extra $7 and got the Mexican Pack which came with...

4 Avocados
6 Large Tomatoes
4 Cloves of Garlic
1 Pack of Cilantro
6 Jalapenos
5 Limes
4 Green Onions
4 White Onions

And for $10 you can add on 5 loaves of Whole Wheat bread which I hear is delicious. Serioulsy where else can you get that much fresh food for $22. I strongly urge everyone to check it out. The great thing is your basket is different every week and it's always produce thats in season so you get to try alot of items you might never purchase at the store! I think they currently have offerings in Idaho, Utah,Arizona, and Washington, and maybe more. However I know if you are interested in it for your town you can contact the gals and try to get one up and running!I know one thing for sure...we will be for sure purchasing our basket next Monday!

A new scrapbook room. When Geoff and I first built our house I painted my scrapbook room bright pink. Well that ended up giving me a headache so I have tried several other colors and finally settled on a light gray on the top half of the room with a chair rail and this amazing wallpaper on the bottom half. So now I need repaint my wall shelfs black, make new curtains and pillows, and add new decor in the new colors of light gray, black, red, and teal. I'll post pictures when it's finished!

Perfect Match by Jodi Picoult. I adore all of her books. She always manages to completely shock you in the last chapter!

Kira, our malamute, is shedding like crazy which means I have to vacuum every 2.5 seconds to try to keep up! Thinking of taking her to Petsmart to get their new Furminator treatment!

{ Amazing Lemon Blueberry Muffins }

2 cups flour

1/2 cup sugar
3 tsp baking powder
1/2 tsp salt
zest of one lemon
1 egg
1 cup milk
1/2 cup shortening (or butter*)
1 cup frozen blueberries

Topping (this makes extra - you can try cutting it down if you want...I personally like lots!)

1/2 cup butter, melted
1 Tb lemon juice
1/2 cup sugar

Mix dry ingredients and set aside. Beat eggs, milk and shortening. Stir in blueberries. Add dry ingredients and stir gently to combine. Bake at 375 degrees for 20-25 minutes. Combine butter and lemon juice. While the muffins are still warm, dip the tops in the butter and lemon juice, then dip in sugar. Makes 12 muffins.

*I substitute butter because I love the taste! It works great either way.

I'm looking for something shaped like this little cutie from Pottery Barn. Too bad I can't just buy these....dang you Pottery Barn and your unattainable prices!

The next item I am very much searching for as an amazing amoire to house my tv in my front room! Agian I really want to find maybe one that I can refinish myself. I really like the looks of this one though...

Pumpkin Cream Cheese

4 oz cream cheese, softened

3 T. brown sugar

2 T. maple syrup

1/4 cup canned pumpkin

1/2 t. pumpkin pie spice

1/4 t. cinnamon

1/4 t. vanilla extract

* In a small bowl beat the cream cheese, sugar and syrup until it's creamy.

* Add pumpkin, spices and vanilla and beat til it's smooth.

* Refrigerate for at least one hour.

* ENJOY!

I hope everyone had a super fun 4th this year!

We both didn't have to work from Thursday on so Geoff and I did all kinds of fun stuff over the long holiday weekend! We did a little camping, hit up the Ross Park swimming pool, set off loads of our own fireworks, Geoff walked with his fire engine and crew in the parade, we went to a friend's barbecue, and of course we went to the fireworks down by the river! All in all it was an awesome weekend with lots of good fun, good friends and good food! Kinda sad that it's all over! ):

I found this awesome website while surfing some other blogs and just had to post it! Vintage Hems is a business that sells the cutest ever slips that are meant to lengthen too short skirts or dresses! They have some super cute styles and to top it all off I find them very reasonable priced.

How stinkin' cute is that black and white polka dot one? How about the stacked ruffle white one! I'll be for sure getting me a couple of these!!

Most people who read my blog already know all about Bakerella. She is this amazing lady who does even more amazing things with cakes and what not. I've made her cake pops on a few occasions and they were great, however I about died when I saw these. How stinkin adorable are these? I can already see myself making them for 4th of July. These little guys just solidify how amazing Bakerella really is.

After I got back from the store this afternoon the sky opened up (again) and proceeded to dump on us (again).

I literally grabbed my camera seconds after it started raining and look how much water was already coming down the rain gutter!!

What you don't see in these pictures is the ice cream truck that continued to circle my block for the next ten minutes. Seriously did he think that kids were going to be hankering for some ice cream in weather like this?

It's June and for some reason it just doesn't feel like it! Come on we need some heat!!

I seriously a naughty blogger. It's been too long. However the weather gets nice and who wants to sit on the computer? Not I! Anyway here are some random things that I'm enjoying right now!

1. Dove Cream Oil Lotion- Geoff and I went to Heise Hot Springs with some friends on Tuesday and I of course got a little too much sun. This lotion is the only thing coming between me and my skin peeling! It's fantastic.

2. These new Crystal Light Skin Essentials. I have tried a few flavors but I keep coming back to the Pomegranate Lemonade flavor. It's pretty stinkin good. Plus they are sized just right for a water bottle.

3. I ordered some of these reusable totes online and they just arrived in the mail. After grocery shopping with them I'm in love. I think I'm gonna have to get some more already. Plus they are just so cute!

4. Otter Pops. When the weather starts to get super hot I practically live off of these. I have like two boxes of 100 on hand at any given time!

5. Mongolian Grill- Geoff and I are going there tonight with some friends and I am already craving it hard core. I love stacking my bowl high and getting to take home lots of yummy veggies and noodles for later.

McDonalds has sweet tea now. It's excellent. I'm addicted. Actually I thinks it's gone past addiction. I've been to Mickey D's JUST for sweet teas 7 times in the last three days. I believe that now what most would call excessive.

You see I'd never had sweet tea until about 5 years ago. That's the summer that Geoff and I went to North Carolina for his dad's wedding. In North Carolina they have a chain of fast food restraunts called BoJangles, it's basically the McDonalds of the south. And they sell the most amazing sweet tea by the gallon. We spent like seven days in North Carolina and had sweet tea with every meal....it was fantastic. And that my friends is how this whole excessive obsession begun.

These are the best sugar cookies ever! A definate must try...

Lemon Sugar Cookies

4 cubes softened butter
3 eggs
2 c. sugar
2 tsp. vanilla
1 1/2 tsp. lemon extract
1 tsp. baking soda
1/4 tsp. salt
6 c. flour

Frosting

1 cube softened butter
1 tsp. salt
1 T. milk
1 tsp. lemon extract
3/4 c. powdered sugar
1-2 drops desired food coloring

Whip until fluffy, butter, eggs, sugar, vanilla, and lemon extract. Slowly add soda, salt and flour one cup at a time. Refrigerate for at least one hour. Roll out on floured surface and cut as desired. Bake on lightly greased cookie sheet for 8 to 10 minutes at 375.

Frosting: Mix all ingredients until smooth.

I absolutely love Panda Express' Orange Chicken. Seriously everytime I'm traveling anywhere near a Panda Express I have to stop and get it! I'm pretty sure that everyone is the same way as well, right? Well I've tried several different recipes that claimed to be Panda Express' but they never were exactly the same. This one is. This recipe is it. It's gotta be............

2 lbs boneless skinless chicken, chopped into bite sized pieces
1 egg1
1/2 teaspoons salt
white pepper
oil (for frying)
1/2 cup cornstarch, plus1 tablespoon cornstarch
1/4 cup flour
1 tablespoon gingerroot, minced
1 teaspoon garlic, minced
1/2 teaspoon crushed hot red chili peppers
1/4 cup green onions, chopped
1 tablespoon rice wine
1/4 cup water
1/2 teaspoon sesame oil

Orange Sauce for Stir Fry
1 1/2 tablespoons soy sauce
1 1/2 tablespoons water
5 tablespoons sugar
5 tablespoons white vinegar
1 orange, zest of

1. Place chicken pieces in large bowl.
2. Stir in egg, salt, pepper and 1 tablespoon oil and mix well.
3. Stir cornstarch and flour together.
4. Add chicken pieces, stirring to coat.
5. Heat oil for deep-frying in wok or deep-fryer to 375 degrees.
6. Add chicken, small batches at a time, and fry 3 to 4 minutes or until golden crisp.
7. (Do not overcook chicken).
8. Remove chicken from oil with slotted spoon and drain on paper towels; set aside.
9. Clean wok and heat 15 seconds over high heat.
10. Add 1 tablespoon oil.
11. Add ginger and garlic and stir-fry until fragrant; about 10 seconds.
12. Add and stir-fry crushed chiles and green onions.
13. Add rice wine and stir 3 seconds.
14. Add Orange Sauce and bring to boil.
15. Add cooked chicken, stirring until well mixed.
16. Stir water into remaining 1 tablespoon cornstarch until smooth and add to chicken.
17. Heat until sauce is thickned.
18. Stir in sesame oil and orange zest if desired.
19. Serve over jasmine rice.

{ I ♥ OCD Tendencies }

So most people that know me would find it hard to believe that I am indeed a little OCD. Questionable right? Wrong. My OCD manifests itself in some very odd ways.

Such as the fact that whenever I am at the doctor's office I HAVE to straighten and fan out the magazines according to genre. I have a great system that I use.....Woman's magazines followed by the In Touch & US magazines followed by the health related mags and so forth. Who does that? Me.

Or how at night when I go to bed I have to take two bottles of water with me for the nightstand. Why two you ask? Well see one bottle inevitably will develop this disgusting after taste somewhere between 1 am and 4 am and I can no longer drink it, hence bottle number 2 comes in handy. If I didn't have that second bottle readily available I would then end up having this much too long debate on whether it was going to be worth it to go all the way downstairs just for water or if I could just deal with the bad after taste and would end up never being able to fall back to sleep. No comment please.

But by far I am the most OCD when it comes to my closet. You see I love my closet, it has it's own window and heating vent and it perfectly fits all my shoes. I love it so much that I can barely stand having any of Geoff's clothes in their. In fact the only clothes I let him keep in their are church clothes. Don't worry he has a decent closet in the extra bedroom. But anyway back to my closet. I have organized all my clothes by color and lengh of sleeves and this system has worked pretty well for me for several years. I can find what I'm looking for and don't have to waste time. Now this is where is gets ugly......

Today I came home and not only had Geoff put my laundry away in my closet ALL wrong but Carma the cat got in the closet and in an attempt to get to the top shelf tried to climb up my clothes with her little kitty claws and pulled so many of them off the hangers to the floor. It was a disaster.

And that my friends is why I love OCD tendencies....because clothes on the floor and in the wrong spots can cause me to have a little meltdown that lasts at leat 20 minutes!

So I opened my email box that is linked to this account tonight and it was FLOODED with messages from my friends saying that I have been leaving them odd comments on their blogs. Upon further investigation I determined that someone is leaving comments from ME but it's really not from ME. Weird huh? So I changed my password but I don't think that it's the problem, it's like they are commenting and just using my name and blog link. I talked with my friend Jill and she said that the same type situation happened to her two weeks ago. What is going on? So anyone that gets a odd comment from me please disregard it and let me know so that I can try to let Blogger know so that they can fix the problem.

I love animals.

That being said I can be found quite often chasing some lost dog down Ammon Rd. trying to help him/her find their way back home via me.

The dog tag licensing office in Bonneville County knows my cell phone number by heart I call them so much.

I seriously can't tell you how many times I have been late to work because I was on my way and had to stop to try to get some stubborn dog into my car so that he/she wouldn't have to die on the road that day.

Geoff is at the point where everytime I pull back into the driveway and tell him I found a "lost" dog/cat/bunny/cow/parakeet I'm pretty sure he mentally is hitting me in the head with a frying pan. Mostly because after I give him the above named animal I head back to work and he is left to deal.

All of that being said you can imagine the situation I was placed in when my little sis and her friend Kinze showed up at my house the other day with Carma. Carma is a tiny kitten that Kinze's dog found. She was so young that her eyes were not even open yet so Kinze bottle-feed her for however long. Well long story short: Kinze's dad said that the kitten is big enough now that it's got to go....and my sister knowing my vulnerability decided to con me into taking it. Who am I kidding it didn't take very much conning. Anyway here is the problem, Geoff is at work for two days and I haven't mentioned that we have an additional family member here yet. So I'm thinking I'll wait till he gets home and see's the kitten walking around and just tell him I have no idea where it came from? Sounds like an amazing idea right? That's what I thought.

On the off chance that this idea doesn't pan out the way I forsee it, does anyone want a really cute, housebroke gray tabby cat named Carma?

Mmmmmm...I just made the most delish pumpkin chocolate chip cookies EVER and so easy! Here's what you gotta do~

1 box of Spice Cake mix (prepared the way the book says)

1 can of pumpkin

1 bag of chocolate chips

Bake for 8-12 minutes at 350.

Seriously that's all. No really it is. When I say easy I mean easy.

So I have got to tell you how excited I am that the Pioneer Woman is doing all these installments on sushi! (Click here for mouthwatering pictures and recipes) I ♥ Sushi! So yummy. Anyway I've been tooling around with the idea of having a fun dinner party where everyone gets to "roll" their own sushi. Obviously there would be non-fishy stuff for those folks who don't like the idea of raw fish. Wouldn't that be fun to have an entire japanese themed party? Ooh and we could make dessert sushi! Wow I am making myself really hungry what with all this sushi talk! Well I'll let you know how it goes........that's all for now!

(1) Darbi Leigh sticks a heart shaped button up her nose and when my parents finally see it hanging down slightly they go in for the grab...when wouldn't you know it Darbi Leigh sucks it right back up. This process goes on for several days before mom and dad proceed to take her to the doctor.

(2) Darbi Leigh and I take baths together when we are super young....this all comes to a screeching halt when Darbi Leigh starts pooing the tub and playing motor boats with it.

(3) Darbi Leigh falls in love with a stuffed monkey that my dad brings home from a business trip. She then proceeds to pretend like the monkey is a real live baby. A baby that needs to be fed 4 times during the middle of the night and has it's own highchair at the kitchen table. This goes on for several months.

(4) Darbi Leigh cannot say "Drink of juice" so instead it comes out "Dink of duce". Whenever she asks my older sister for a "Dink of duce" she makes her ask several times because it's so stinkin funny. After ten or so times of making her repeat it our mom would yell "Just please get her juice!"

(5) Darbi Leigh has a taste for pennies. She constantly steals them from me and my sister's stash and gobbles them down.

(6) Darbi Leigh cannot say "Kitty". My dad brings home a wild kitten one night that proceeds to hide behind the fridge for 3 days. During that three day period Darbi Leigh (who is two) constantly lays by the fridge and yells "HERE CATTY..CATTY!!". When the cat finally emerges from behind the fridge it will not come to anything but "Catty". My family had "Catty" the cat for 17 years.

(7) Darbi Leigh loved mayonnaise. She loves it so much that her idea of a sandwich is an inch of mayonnaise and two pieces of American cheese. Oh and it was all placed on white Wonder bread. Yum.

(8) Darbi Leigh like to invade other peoples privacy. In one incident she hid under my bed during a four hour phone conversation when I was in high school. She learned a lot of personal stuff that day. And she got a little cramped.

(9) Darbi Leigh rides her bike around the neighborhhod with a Sqeeze It drink attached to her handle bars. She pretends like she is drinking beer. She is only six at this time. My parents are fairly disturbed by it.

(10) Darbi Leigh really liked apples in first grade. So much in fact that every item of clothing that she got that year for back to school had apples on it some where. No doubt that was a tough year for my parents what with having to find apple clothes.

Happy ♥ Day Everyone!!! I thought I'd take a note from Holly's blog and make a little list of the stuff I am currently loving.

(1) Red Robin.......How much is everyone else in IF loving having our new Red Robin? I don't know about you but I'm pretty sure I've been there at least 6 times since they opened! Yummy!

(2) This freakin awesome Fossil watch......I find it completly amazing and I am pretty sure I'll have to order it!

(3) This equally awesome purse from the Buckle! Tell me this does not scream "Lindsay". That's what I thought as well!

(4) The new Febreze Hawaiian Aloha Scent? This smells amazing! I bought it in the fabric refresher, air freshner, and carpet powder. I'd like to think that it smells like Hawaii at my house now (but probably not).

(5) This fun shoes on the Naughty Monkey website are just to die for!

(6) I ♥ this dishes SOOOO much! I seriously am so in love with them......

Sorry everyone I've been super busy. We took a trip back to Oregon to visit my mom and family (pictures and stories to come later). Ever since I returned home my computer has been acting super crazy so I'm in the process of shopping for a new one. Just thought I let you know I'm still here and will return to my normal posting schedule as soon as I decide on what laptop I want!

Today I woke up feeling super crafty for some reason. Ironic enough instead of getting to express that creativity I got to go down to the courthouse and sit for several hours while the decided whether or not they needed my services.......That's right folks, I'm on jury duty. And can I just let you know exactly HOW much fun being on jury duty is? Pretty much the highlight of my life right now...j/k. Plus as an added bonus after they decided they had no use for me today I was informed that if I'm not used for a case by the end of this week that I'll be back in April to try again! How awesome is that?

Anyway, enough with jury duty, I did get home early enough today to complete one layout and start several others! Here is the one I finished.....

Journaling reads*** Most of my pictures of Kira look like this. Every time I pull out the camera and start snapping away she takes it as an invitation to come and stick her big, black, wet dog nose right in my lens. As if she is saying "whatcha' doing?"

And these are some fun little frames I painted and decorated for my kitchen......they were so simple and came together in only about 1/2 hour.

Can I tell you how much I love having Saturdays off. Since I work in retail I do not get that many Saturdays off, but today I was off. And let me tell you I was so productive. Here's what I accomplished.....

* Paid 3 bills
* Went to ETM *AND* I Scrap and stocked up on goodies
* Went grocery shopping
* Talked w/ my mom and finalized some plans for our upcoming Oregon trip in 2 weeks
* Baked Snickerdoodle cookies
* Cleaned the top floor of my house
* Finished laundry
* Caught up on my favorite show, One Tree Hill
* And last but not least, scrapbooked alot!

I was browsing around online today looking for the newest scrapbooking stuff that emerged from CHA this winter and take a lookie at what I found......

1. These new Prima Flowers look fantastic and so cute!

2. Oh and I'm so excited to see some new Chatterbox products! Look how awesome they look! I can't wait to see them in person.

3. 2. Sassafras has some really cute new lines.....some of my favorites are Life Is Beautiful - Indian Summer and Serendipity- Sunshine Lollipop and of course you know I love the whole owl craze so for that there is Serendipity - Owl Pals

4. This little gadget from Making Memories looks awesome. How cool would it be to have this to take with you to crops? I mean right now I take my Cricut w/ me but this would be so much easier!

5. I am loving the colors in Cosmo Cricket's new Fleuriste line, so fun!

{ Kicking Off Valentines Week }

So I had a pretty good weekend, on Sat. my friend Ashley and I decided we were going to make Vanilla Cinnamon rolls (a yummy recipe that I found on Sherelle's blog). Ashley wanted to try out this recipe so we decided to make both. Once I got to her house though we decided to make make an entire dinner for the guys which in addition to the meatballs included this and this. Then just for fun I wanted to make a batch of these. So we quickly wrote down EVERTHING we we needed from the store and off we went............However we didn't quite make it to the grocery store. Let me back up and try to explain what happened. You see Ashley drives a little tiny Jetta (not such a hot car in the snow) so we were driving along trying to take the back roads to the store and of course we were talking like crazy, when we came to a huge snow drift ( actually we almost drove into the snow drift) Well somehow between the two of us we decided to drive around the drift where it looked as though other cars had been driving. Yea that didn't work so well at all, we made it maybe 20 ft of so before we bottomed out pretty bad. As in we got super stuck. Luckily some really nice teenage boy named Chandler (like on Friends) came along and tried to help us out. No such luck. More men gathered around the car and finally all these men were able to push/pull of out of the drift. Needless to say I am really glad to live in a town where people actually pull over when they see people in trouble! So that was my exciting Sat.

PS* All our food turned out fantastic!

Anyhow I did a little Valentine layout to celebrate this week.......

Here's what I'm am loving on this particular Tuesday.....

1. My new cute phone....A little Blackberry Pearl which is the most awesome thing ever!

2. Today I actually got my Scentsy order that I placed at a party a week or so ago Let me tell you how AMAZING my house smells right now! Worth every penny that I spent on it. Seriously folks these little scent bars are fantastic. If you don't already own some, buy some. I am actually having my own little Scentsy party later this month so I can stock up on some more flavors.

3. American Crafts new Valentine ribbon. I mean the picture says it all. Oh don't you just love ribbon? Speaking of ribbon, this weekend I met the owner of the Ribbon Retreat in Shelley, Idaho and she is a cool gal. If you have not already been to her store you need to check it out. She always has some fantastic deals! ( Plus she told me she is going to be getting in some fun new American Crafts lines!)

4. This fun patchwork purse from Charlotte Russe, how stinkin cute is this....

5. And speaking of purses, have any of you ever visited the Lime Llama website. This girl will custom make any style of bag you like just pick the fabric.

6. I am so in love with these cute little owl thingies. I found them through Scrap in Style TV and now I just really want to make my own.

7. The newest edition of Scrapbooks Etc. Now I usual like CK better then Scrapbooks Etc. but lately they have had some great new articles and layouts. I am especially liking some super fun layouts in this months mag.

Hot Chocolate Cookies

For the cookies:

1 3/4 cups all-purpose flour
1 cup instant hot chocolate cocoa mix - 1
teaspoon baking soda
1/2 teaspoon salt
12 tablespoons unsalted butter, softened
1/2 cup granulated sugar
2 large eggs
1/4 cup milk
1 teaspoon vanilla
24 large marshmallows, cut in half crosswise

For the chocolate drizzle:

1.5 ounces of bittersweet chocolate, chopped

Preheat oven to 350.I
n a medium bowl, whisk together flour, cocoa mix, baking soda and salt.
In a large mixing bowl, beat together butter and sugar until creamy.
Add the eggs, one at a time, mixing until combined after each.
Mix in milk and vanilla.
Add the dry ingredients and mix just until combined.
Using a teaspoon cookie scoop, drop the dough onto parchment lined baking sheets.
Bake until the cookie are set, about 8 minutes.
Remove and carefully place a marshmallow, cut side down, in the center of each cookie.
Place back in the oven and continue baking until the marshmallow begins to look puffy, about 1 to 2 minutes.
Remove and let cookies sit on the baking sheet for 1 minute before moving them to a wire rack to cool completely.

To make the chocolate drizzle:
Melt the chopped chocolate in microwave on high for 30 second.Pour the melted chocolate into a zipper bag, and cut a slit at one corner.

Unleash the Picaso in you and pipe away!

These little yummies are the most fantastic cookie that you will EVER taste!

Brownie Bottom Cheesecake

Okay...I'll admit it. I am in LOVE w/ cheesecake! Any kind of cheesecake really but this one rocks since it has the brownie on the bottom. That's like the best two desserts put together! Bliss.

4 squares BAKER'S Unsweetened Baking Chocolate
1/2 cup (1 stick) butter or margarine
2-1/4 cups sugar, divided
5 eggs, divided
1/4 cup milk
2 tsp. vanilla, divided
1 cup flour
1/2 tsp. salt
3 pkg. (8 oz. each) cream cheese, softened
1/2 cup sour cream

*Preheat oven to 325°F.
*Microwave chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted.
*Stir until chocolate is completely melted.
*Add 1-1/2 cups of the sugar; mix well.
*Add 2 of the eggs, one at a time, mixing on low speed after each addition just until blended.
*Add milk and 1 tsp. of the vanilla; mix well.
*Combine flour and salt.
*Gradually add to chocolate mixture, mixing after each addition just until blended.
*Spread evenly into greased and floured 9-inch springform pan.
*Bake 25 min.

*Beat cream cheese, remaining 3/4 cup sugar and remaining 1 tsp. vanilla in large bowl with electric mixer on medium speed until well blended.
*Add sour cream; mix well.
*Add remaining 3 eggs, one at a time, mixing on low speed after each addition just until blended. *Pour over brownie layer in pan (Filling will come almost to top of pan.)
*Bake 55 min. to 1 hour or until center is almost set.
*Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. *Refrigerate 4 hours or overnight.
*Let stand at room temperature 30 min. before serving.
*Store leftover cheesecake in refrigerator.

Chicken Parmesan Bundles

This is an awesome recipe that I got off of the the Kraft website a few years back and it is delish!! Plus it been a big hit with kids as well! Everyone must try!

4 oz. (1/2 of 8-oz. pkg.) cream cheese, softened
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1-1/4 cups shredded skim mozzarella cheese
6 Tbsp. grated parmesan cheese
6 small boneless skinless chicken breast halves (1-1/2 lb.), pounded to 1/4-inch thickness
1 egg
10 Ritz Crackers, crushed (about 1/2 cup)
1-1/2 cups spaghetti sauce, heated

*Preheat the oven to 375ºF.
*Mix cream cheese, spinach, 1 cup of the mozzarella cheese and 3 Tbsp. of the parmesan cheese until well blended; spread evenly onto chicken breasts. Starting at one of the short ends of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired. Set aside.
*Beat egg in shallow bowl or pie plate.
*Mix remaining 3 Tbsp. parmesan cheese and the cracker crumbs in separate shallow bowl or pie plate.
*Dip chicken bundles in egg, then roll in crumb mixture.
*Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray.
*Bake 30 min. or until chicken is cooked through (165ºF).
*Remove and discard toothpicks, if using.
*Serve topped with the spaghetti sauce and remaining 1/4 cup mozzarella cheese.

Recipe Day I :Blue Cheese-Tomato Spread

1/2 cup sun-dried tomatoes
Boiling water
1 pkg. (8 oz.) cream cheese, softened
1 pkg. (4 oz.) crumbled blue cheese
3/4 cup real mayonnaise
2/3 cup chopped pecans, toasted
1/2 cup minced fresh basil

Place tomatoes in small bowl. Add enough boiling water to completely cover tomatoes; let stand 30 min. or until tomatoes are soft and plumped. Drain tomatoes; chop into small pieces. Set aside.
Beat cream cheese and blue cheese in small bowl with electric mixer on medium speed until well blended.
Stir in tomatoes, mayo, pecans and basil; cover.
Refrigerate several hours or until chilled.
Serve as a spread for assorted crackers.

Here's the kicker.......prices for 7"x7" softbound books are only $12.95. That's right folks 12 bucks for a cute 40 page custom made book! How cool is that? Geoff just cracks me up! Last night I was sitting in the kitchen cracking open and eating walnuts when Geoff came in and started STUFFING his mouth full of uncracked nuts, he reminds me of Hammie on "Over the Hedge" Funny stuff right there.

Okay I know Thanksgiving was only yesterday but I had to do it. That's right people I had to put up all my Christmas decorations. I am one of those people who would probably put up Christmas decor the day after Halloween if Geoff would let me! I LOVE THEM!! So needless to say my house is beginning to look ALOT like Christmas!
